What is AeroTech™ true convection cooking?

AeroTech™ true convection cooking is the cooking system used in our large capacity ovens. Cool air in the oven is drawn in through the centre of the oven and pushed out around the cavity in a dynamic turbulent motion. This is graphically explained below:

With this system and the soft contours of the interior heat is distributed evenly around the oven, eliminating hot and cold spots. This makes cooking on multiple shelves idea.

A great example is when you are baking on multiple shelves, e.g. three trays of cookies. The cooking function to use is True Aero, which utilises the concealed heating element in the back of the oven to heat air and then the fan blows the heated air into the cavity. This function ensures a consistent temperature throughout the oven making baking well risen and evenly coloured. Cookies are especially crispy on the outside and chewy in the middle. Thus whether the cookie is on the top shelf at the back, or at the front of the bottom shelf you can be assured they will both be evenly browned, crispy and chewy.

Lastly, the cooking system uses microprocessors instead of a thermostat to control the oven temperatures. Conventional thermostats control the oven temperature within about + 28°C of the set temperature at best. Our system however can control with the exceptional accuracy of + 3°C of the set temperature. This will ensure your results are consistent each time.
